  • 480 g flour
  • 5 g baking powder
  • 6 g salt
  • 80 ml vegetable oil
  • 280 ml of warm water

Method of preparation:

In a bowl put the flour, salt and baking powder. We mix them and make a hole in the middle of it.

Add water, oil and mix with a spatula until it becomes inefficient, then move to manual kneading.

Knead until it peels off the walls of the bowl and get an elastic dough, quite soft and slightly sticky, do not add more water that will come out dry. We leave it aside for 10 minutes covered.

Remove the dough from the bowl on the work surface and knead for another 5 minutes.

Let it rest again for 10 minutes and then divide it into 16 equal parts.

Spread each piece of dough on a work surface sprinkled with flour 24 cm circles.

Bake on a hot pan for 40-50 seconds on each side, you don't need more, as they are quite thin and otherwise they will dry out.

Put the flour in a bowl and add the oil and hot water mixed with salt over it. Knead the mixture with your hands for one minute, until a homogeneous and elastic dough is obtained. If the dough is too soft, then you can add a little more flour. Round the dough, put it in a bowl and leave it covered in a warm place for 30-40 minutes.

The next step is to prepare the worktop. Put flour on the table, put the dough and cut it into four pieces that you round into a ball. Leave the dough balls to rest for 10 minutes, then spread them on the counter in a round shape.

Put a non-stick pan, without oil, on the stove, over medium heat, and when it is well heated, add a sheet of dough and let it bake on each side for 2 minutes, until it browns.

A homemade tortilla recipe from: flour, baking powder, lard, oil, salt, cucumber, smoked salmon, lettuce leaves, cottage cheese, yogurt and pepper.

Ingredient: />

  • 500 g flour
  • 1/2 teaspoon baking powder
  • 100 g lard
  • 120 ml oil
  • salt

for the filling:

  • 1 cucumber
  • 200 g smoked salmon (or other fish)
  • 1-2 lettuce leaves
  • 300 g Telemea cheese
  • 300 g of cottage cheese
  • 3-4 tablespoons of yogurt
  • salt
  • pepper

Method of preparation:

For the tortilla, mix the flour with the salt and baking powder. Add lard and pour the water gradually. Knead until you get an elastic dough. Divide the dough into 12 pieces (balls). roll out each dough until you get a round, thin sheet.

Heat a large skillet (grill) and fry each tortilla on one side and the other until it blisters and browns. Take them out on a plate and cover them with a clean napkin until you work and the rest of the tortilla sheets.

For the cream cheese, mix the cheeses with the yogurt, salt and pepper. Slice the cucumbers and cut the salmon and lettuce leaves into strips. Mix all the ingredients lightly so as not to crush them too much.

Fill the tortilla sheets with stuffing, roll carefully and serve immediately.

To make good glue for shaorma, one of the basic conditions is to have a pan that can withstand this kind of preparation & ndash not to burn, to bake evenly, not to glue. Ingredients for the filling

  • 125 g of fresh mushrooms
  • 1 clove of garlic
  • 100 g of cheddar cheese
  • 75 g of cream (15% fat)
  • fresh dill
  • 1 tablespoon olive oil
  • nutmeg
  • salt
  • pepper
Method of preparation

First I prepared the filling. I cut the mushrooms and garlic into small pieces, chopped the dill and grated the cheddar cheese on a small grater. In a pan I put a tablespoon of olive oil and hardened the mushrooms with garlic, stirring constantly. I left the mushrooms on the fire for about 10 minutes, until they softened and the liquid completely dropped. I took the pan off the heat and let the mushrooms cool a bit. I added the greens, cheddar cheese and sour cream and seasoned with salt, pepper and nutmeg. This filling is enough for four glues.

Glue Ingredients (4 pieces):
  • 200 g of 650 type flour
  • salt
  • fresh basil
  • fresh dill
  • 200 ml of warm water
  • olive oil
  • 30 g of cream (for greasing)
Glue preparation

I chopped dill and basil. I put the flour in a bowl and added a pinch of salt. I poured warm water, little by little, and kneaded until I got a thick dough that was easily removed from the hands. If necessary, you can add more flour or water, depending on how much the dough requires.

I divided the dough into four equal parts. On a plate sprinkled with flour, I put a piece of dough and spread a round sheet with the rolling pin. I sprinkled a quarter of the amount of greenery and folded the sheet into three. I stretched again with the twister a round sheet with a diameter of about 25 cm. It is very important that the sheet is very thin. Using a brush, I greased the sheet with olive oil on both sides.

I fried the oil-free sheet over medium heat in a Teflon pan for about 2-3 minutes. I repeated the operation with the other 3 pieces of dough.

I divided the mushroom and cheese filling into four equal parts. I filled each glue with this composition and rolled them carefully. Simple recipe for homemade pita glue (without yeast)!

Pita are water-based yeast-free glues that are baked on a pan, and a filling pocket is formed inside. The pocket can be filled with meat, vegetables or sauces. The sticks can also be served as bread. It is very easy to prepare, and the ingredients are affordable and are usually found in any kitchen.


-350 gr of flour (+ 10-20 gr for sprinkling)


1.Add the salt to the water and mix.

2. Pour the hot mixture into the sifted flour bowl and add oil.

3.Mix the dough with a spoon, then knead it with your hands for about 1 minute. The dough is quite soft and practically non-sticky.

4. Round the dough, put it in a bag and leave it for 20 minutes.

5. Transfer the dough to the well-floured work surface and work it a little. Then divide it into 8 equal pieces, 80 grams each.

6. Round each piece of dough and place them under the plastic bag so that it does not dry out.

7. Let the dough rest for 10 minutes, then roll out dough sheets with a diameter of about 15-16 cm. Sprinkle the glues with flour, so that they do not break or stick in any case, otherwise they will not grow and will not form a pocket. The glues must also have a round shape.

8. Fry the glue on the hot pan until browned on both sides.

Then turn it over again and, in 20 seconds, you will notice how the pocket swells and forms.

Turn the glue once more, so that it leaves, and bake it for another 20-30 seconds.

Pita tastes like a homemade thin paste. Keep in mind that if the surface of the glues is damaged, the air will come out through the hole and they will not swell. However, the sticks will be very tasty, but already without a pocket.

Mexican tortillas or sticks

Tortillas are a common presence on Mexican tables. They can be eaten plain or can be the basis for burritos, quesadillas, enchiladas. They can also be cut, fried and eaten as chips with spicy sauces or in salads. Tortillas are a versatile food, and the best are the homemade ones with white flour or corn flour.

Sift flour, salt and baking powder into a large bowl. Add the lard and knead lightly with your fingers until incorporated into the flour. At first the lard will crumble and form small balls in the flour. Don't be scared, knead it further because it will homogenize. Add water little by little and continue to mix until you get a homogeneous dough. Do not pour all the water at once because your dough will become sticky and you will not be able to knead it.

In the end you have to get an elastic and soft dough. Put it on the worktop sprinkled with 1-2 tablespoons of flour and knead it well.

Divide it into 12 equal parts, roll them into balls and get ready to heat the pan.

Use a large diameter pan (26-28 cm) and leave the heat on medium.

With a rolling pin, wrap each ball in a sheet of tortilla as thin as possible. Put it in the hot pan and bake it for 1-2 minutes on each side. At first it will swell and make bubbles similar to rubber balloons. Turn it on the other side and leave it in the pan until it browns.

As you make them, put the tortillas in a towel to keep them warm. Use them to roll in them delicious burittos or with cool summer salads.

During this period of great trial for all, the period of isolation at home, due to the pandemic of covid-19, because the yeast became "truffle", I tried all kinds of bread recipes, including the recipe Homemade sticks with a mixture of growth agents.
