  • 200g plain flour
  • 150g wholemeal flour
  • 75g oats
  • 2tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp cinammon
  • 1/2 tsp ground ginger
  • 2 eggs
  • 2 egg whites
  • 150g brown sugar
  • 50g grated coconut
  • 4 tbsp rapeseed oil
  • 5 tbsp yoghurt (I use 0% fat)
  • 1 tsp vanilla
  • 150g apple sauce
  • 165g grated carrot
  • 50g grated courgette
  • 100g raisins
  • 60g nuts
  • 1 apple, peeled and chopped

  1. Mix plain and wholemeal flours, baking powder, bicarb and spices.
  2. Beat together eggs, egg whites, sugar and oil and add to flour mixture.
  3. Mix in all the other ingredients until they are well blended.
  4. Place mixture into muffin trays and bake on medium temperature for about 20 minutes - until skewer inserted into the centre comes out clean.

A couple of weeks ago, I made breakfast for a houseful of girls who were staying with friends for a discipleship weekend our church was putting on. I made these for Sunday breakfast. I wanted something that could be warmed up easily so the hostess would not have tons of preparation work to do on Sunday morning while trying to get 12 girls ready to transport to church by 9 a.m.

I served these muffins along with Raspberry Lemon Streusel Muffins, but they also warmed up the leftover Sausage Gravy and Biscuits from the day before along with the leftover Pecan Cranberry Muffins. They were such a big hit. Plus, since Debra, the hostess, has Celiac Disease she was able to enjoy a gluten free breakfast.

Listen guys, these muffins are a must try! They will make a spectacular addition to your holiday menu. If you want a bacon and egg breakfast, make up a batch of Breakfast Muffins and watch them disappear.

Breakfast Muffins are so delectable.

These make a great breakfast for buffets, special occasion breakfasts, or for the holidays like Christmas or Thanksgiving.

Breakfast Muffins are so scrumptious that I could eat four or five of them at once!

I used these ingredients plus red and orange bell peppers and parsley.

For the hashbrown crust, mix hash brown potatoes, egg, half the salt and the pepper, olive oil and 1 cup of cheese.

Stir to combine.

Spray muffin tins with cooking spray. Press hash brown mixture evenly in 24 different muffin tins. Sprinkle each one with parsley. Bake at 400 for 10-15 minutes or until lightly browned.

In a mixing bowl, whisk eggs.

To eggs, add remaining cheese, cooked bacon pieces, remaining half of the salt and pepper, red and orange bell pepper and milk or cream.

Stir to combine.

Pour egg mixture evenly into each hash brown crust. Sprinkle each egg with additional parsley, salt and pepper.

Bake at 400 an additional 10-15 minutes or until eggs are cooked thoroughly.

Serve Breakfast Muffins with your favorite sides.

I served Breakfast Muffins with Raspberry Lemon Streusel Muffins.

These muffins are so festive and beautiful. So great for the holidays.

Step 1

Wash and cut blackberries in half. Add blackberries and gently fold them into the batter.

Step 2

In a bowl, combine flour, butter, sugar, and salt with your hands.

Step 3

Pour the batter in your favorite mug. After pouring batter into mug, sprinkle crumble mixture on top. Microwave on high for 2 minutes, adding time until completely done. Allow to cool and enjoy your homemade mug muffin.

Pear-Cardamom Muffins

These pear-cardamom muffins are as elegant as they are easy. Even with the added step of creaming the butter and sugar, the batter still comes together in about six minutes. We reach for buttermilk to keep the crumb moist and offset some of the earthy notes. Since the cardamom can be quite strong, we add a hint of cinnamon and nutmeg to help balance out the flavors. The sweet, fruity, and lightly spiced muffins pair especially well with a cup of tea.

Preheat the oven to 350 degrees F. Grease a muffin tin.

Brown the sausage in a skillet over medium-high heat. Drain off any excess grease. Divide the sausage between the greased muffin cups.

In a bowl, whisk together the eggs, baking mix, half and half, salt, and pepper. Pour the egg mixture over the sausage, filling the muffin cups 3/4ths full. Sprinkle each muffin with some of the grated cheese.

Place the muffin tin in the oven and bake at 350 degrees F for 25 minutes or until set. Serve hot.

Variation: Add chopped onions, green bell peppers, mushrooms to the sausage mixture while browning. You can also use bacon or ham in place of the sausage.
