Lean Cheese Ingredients

Cooking Lean Cheese:

Step 1: prepare the almonds.

We put the kettle with 300 grams of ordinary running water on the stove, turned on, to a strong level and bring the liquid to a boil. Pour the right amount of almonds into a deep bowl. Pour the nuts with boiling water and keep them in hot water. 15 to 20 minutes. Then, carefully pour the liquid from the bowl, dry the almonds with paper kitchen towels from excess moisture and easily remove the leathery shell from each nut with your fingers. Transfer the peeled almonds to a dry and clean blender bowl.

Step 2: mix the ingredients and prepare the bowl.

In the blender, add the right amount of concentrated lemon juice, olive oil, garlic and salt to the nuts. The last ingredient can be adjusted to taste, the main thing is not to oversalt. We turn on the kitchen appliance at the highest speed and grind all the products to a creamy, smooth mass. This process will take only a few minutes. Then we take a deep, heat-resistant glass bowl and set a fine mesh sieve on its surface. On top of the sieve we put 1 meter of sterile gauze, after folding it in 3 layers.

Step 3: filter the nut mass.

Using a tablespoon, transfer the nut mass to the cheesecloth. We connect all sides of the transparent fabric so that a fist is obtained, and we bind them with a regular elastic band. We put the bag with the aromatic mass back onto the sieve and put the resulting structure in the refrigerator for 12 hours.

Step 4: prepare the nut mass for baking.

After 12 hours preheat the oven up to 180 degrees Celsius. Remove cheesecloth with a nut mass and a bowl from the refrigerator. As you can see, after such a long time, there is not much liquid in the bowl. Remove from a heat-resistant bowl a sieve with a nut mass. We rinse the container under warm running water, dry it with paper kitchen towels and grease it with 1 tablespoon of vegetable oil or treat it with a spray as indicated in this recipe. We untie the gauze knot. And we turn the nut mass into a greased bowl with the smooth side up, it will easily settle into the container.

Step 5: bring the cheese to full readiness.

Now we check whether the oven has warmed up to the desired temperature and only after that we send the bowl with the nut mass to the oven, setting it on the middle rack. Bake lean cheese for 40 minutes or to a light golden crust and small cracks on the surface of the fragrant round. In 40 minutes remove the container with the finished cheese from the oven, holding the bowl with a kitchen towel, and put it on a cutting board laid on the kitchen table. Allow the finished product to cool to room temperature. Then we put it in a plastic container, close it with a tight-fitting lid and put it in the refrigerator for a couple of hours so that the cheese settles a little and hardens. After savor with pleasure!

Step 6: serve lean cheese.

Lean cheese is cut into portioned layers with a thickness of 5 millimeters to 1 centimeter, laid on a plate and used in the form of slices. At will, it is sprinkled with chopped dill and watered with heated vegetable oil. The texture of the cheese is of medium softness, so it can be easily spread on croutons or buns. To taste, it resembles the famous dairy product "Feta", with a pronounced aroma of almonds. Cook and enjoy a delicious lean meal! Enjoy your meal!

Recipe Tips:

- - This type of cheese can be stored in the refrigerator for 2 weeks.

- - If desired, chopped greens of dill, parsley, basil, cilantro or dried French herbs to taste can be added to the nut mass before settling.
