Preparation of sea buckthorn compote:

Step 1: prepare sea buckthorn.

To begin with, we sort through ripe, whole berries of sea buckthorn from not ripened and spoiled. We spread the selected component in a deep bowl and gently rinse under running water, while simultaneously removing the stalk from each berry. Then we drain the water through a colander and leave the sea-buckthorn for a while, so that water can drain from it. But that is not all! We spread the ingredient on a kitchen table covered with paper towels and leave it in this state on 1 hourso that the berries are completely dry.

Step 2: prepare the syrup.

For 1 liter of water, 800-900 grams of sugar is required. If you like not very sweet compotes, then the amount of sweet ingredient can be reduced at will. So, pour the purified water into the middle pan and bring it to a boil. After this, pour sugar into the container and mix well with a tablespoon until it is completely dissolved. The syrup must be very hot when we fill them with sea buckthorn.

Step 3: prepare sea buckthorn compote.

We spread the prepared sea buckthorn berries in sterilized jars so that they fill the container on 2/3 containers. Then fill the fruits with boiling syrup to the neck of the cans and cover with lids. We spread the cans with compote in a large pan and fill the container with water so that the water covers the cans on 1.5-2 centimeters below the top of the necks of the container. We put all this on a medium fire and, when the water boils, we make the fire quieter, but so that the water boils. Attention: we should not get a boil so that the banks do not crack during the pasteurization process. The processing time for preservation depends on the capacity of the container and takes approximately 10-20 minutes. After that, we get the container with the help of fabric tacks and put it on the kitchen table. We tightly twist the cans with a can wrench with sea-buckthorn compote and put in a secluded place where no one will disturb our conservation. Be sure to cover the banks with a woolen blanket so that they cool quietly for 2-3 days until finally become room temperature.

Step 4: serve sea buckthorn compote.

In fact, our compote is ready! And especially impatient you can even open one jar per sample. Well, serving sea buckthorn compote, of course, is better in the cold season, when our body is so lacking in vitamins and nutrients. It is very delicious to enjoy a cup of this wonderful drink and a slice of homemade pie. And the most important thing is that canned sea buckthorn berries can also be eaten, as they turn out to be very soft and leave a pleasant aftertaste in the mouth. Good appetite!

Recipe Tips:

- - Sterilized banks until you work with them, you need to put on a clean towel with the neck down so that they do not get extra objects and midges.

- - In addition to fresh sea buckthorn berries, even frozen ones can be added to compote. To do this, they must be removed from the freezer and left in a warm place so that they thaw and become room temperature. And only after that we rinse them with running water and put them on paper towels so that they dry out.

- - You can also add apples or pears to the sea buckthorn compote, then your drink will become even tastier and richer!
