Ingredients for making quince pastille

Cooking quince pastille:

Step 1: Prepare the ingredients.

The first step is to rinse well under cold running water, and then cut each fruit into four parts and cut the core. In this case, do not peel off the skin. I also wash the lemon, cut into four parts and remove all the bones.

Step 2: Cook the quince.

Now we transfer the fruits to the pan, fill with water and send to cook on medium heat. Cook about half an hour, or rather until quince is soft. Then we drain the water from the pan and discard the lemon. Then remove the peel from the quince and cut it into small pieces. Again we send to the pan, we fill it with sugar and set to cook on medium heat. Cook until full thickening of the mass (about 60-80 minutes) It is necessary to stir occasionally. Keep in mind that when cooking quince will change its color, so do not be afraid that you did something wrong. When the mass becomes brownish and thick enough, remove the pan from the heat, and grind the quince with a blender. Then we transfer the quince puree back to the pan and cook over low heat, stirring constantly within 10-15 minutes.

Step 3: Cook the quince pastille.

Immediately pour the finished hot mass into a rectangular shape (which we don’t lubricate with anything) and let it cool at room temperature, then cut it into pieces, wrap it with cling film and send it in this form to be stored in the refrigerator.

Step 4: Serve quince pastille.

Before serving the pastille on the table, let it lie down in the refrigerator for at least 24 hours. Traditionally, quince pastille is eaten with cheese, but we have our own way: take a piece of fresh bread, put the pastille on it, and grease with cream cheese on top. Top can be decorated with a slice of walnut. Well, what, not a snack? Enjoy your meal!

Recipe Tips:

- - Instead of lemon, you can take a red orange, which also needs to be cut into quarters.
