Spatchcocked is just a fun word to say. Plus, when you do it, you get a tender, moist, and flavorful bird. What is it exactly? It basically means to butterfly a chicken by removing the backbone to cook the chicken flattened. Why would you do this? It helps to cook the chicken more evenly so that the breast meat doesn't dry out as easily, plus it reduces the cooking time. (You can also reserve/freeze the backbone to make chicken stock — it adds delicious flavor.)Use this rub or just season the bird with salt, pepper, and fresh herbs. Instead of grilling the chicken, you can also roast it in the oven or broil it if you'd like.Click here to the see Winner, Winner, Grilled Chicken Dinner story.

How To Make Our 3-Ingredient Chicken (45 Sec):

The chicken is lightly saucy and sticky on the outside and tender, juicy, and loaded with flavor on the inside, and grilled to golden brown grill perfection on skewers because CUUUUTE! It’s really adaptable since it just starts with a base of three ingredients, so you could think of a bajillion and one ways to give it more of a personalized kick and they would all be just as simple as tossing a few more ingredients into the bag. Ginger, maybe? Jalapeño? Peanut butter to do a creamy-peanut-sauce type thing? I have plenty of ideas for elaboration in my head.

But as is – the short recipe – that’s the kind of recipe that can stay filed away in the back of my head and that will get pulled out whenever we need to feed people (read: ourselves) something really summery, flavorful, and satisfying.

This grilled chicken goes with just about everything, including but not limited to 5 Minute Magic Green Sauce, and it makes for a great Getting Ready For The Week recipe that you can keep in the fridge to toss in salads, wraps, and noodle and rice dishes.

Normally me and chicken don’t really love each other. I mean, you guys know what I eat better than anyone, and you know that I don’t make a lot of chicken in my life. This is true.

But that’s because I can only morally support chicken that is really, really delicious – flavor, texture, all of it – and a lot of the chicken that I find myself eating in life is just medium delicious. I’m super picky with chicken, and in this case that’s actually a good thing for everyone because I’m not interested in something halfway good. AND THIS. This passes my Delicious Chicken Test.

I have to have to HAVE TO to give a huge shout out to my friend Liz for sharing this genius idea with me – she and her huzz were actually sweet enough to invite us to her house for dinner (Sage included!) and feed us the best grilled pork using this 3-ingredient marinade.

And in return, I was greedy enough to seriously badger her for the very explicit how-to on the pork and then replicate the process with chicken and post it on my food blog. I’m so fun like that.

The beauty of this recipe is that it’s so easy that EVEN I CAN DO IT. Like – I can actually grill. I can make grilled chicken. I can make grilled chicken that tastes so super good. And you’re talking to a person who does not grill.

I’d like to close today with one more shout out to my 5 Minute Magic Green Sauce, which continues to be amazing on everything including soy sauce and honey grilled chicken. I’m very aware that it doesn’t even make sense (avocado and parsley in a sauce? plus soy sauce chicken?) but I do not question the powers of that sauce.

So. This pretty chicken! And the smell of the grill. And the taste of the plate piled high with rice, chicken, cilantro, lime, and 5 Minute Magic Green Sauce.

Ingredients of Grilled Chicken

  • 350 gm chicken
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon cumin powder
  • salt as required
  • 1/2 cup hung curd
  • 1/2 teaspoon garlic paste
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon powdered black pepper
  • 1 teaspoon garam masala powder

How to make Grilled Chicken

Step 1 Wash the chicken pieces

To prepare this easy chicken recipe, wash the chicken pieces and prick them with a fork. Now, in a large bowl, combine hung curd, ginger paste, garlic paste, red chilli powder, coriander powder, cumin powder, black pepper, salt and garam masala. Stir all the ingredients together until well blended.

Step 2 Grill it to perfection and serve hot!

Now add the chicken pieces and apply the masala mixture all over them. Cover and refrigerate for at least 8 hours or up to 24 hours. Once done, preheat the oven at 190 degree Celsius. Remove the chicken pieces from the marinade and place them on a grilling tray. Grill them for 1 hour, flipping them after 30 minutes so that both sides can cook evenly. Check if the chicken has fully cooked by taking one piece out and cutting it with a knife. Serve hot with salad or a dip.

Healthy Grilled Chicken Breast Recipe

Looking for an easy and healthy chicken breast recipe? Look no further. You can make an excellent boneless skinless chicken breasts right on your Foreman Grill. This recipe is very versatile and can be enjoyed as a meal or in a variety of chicken dishes. If you have fresh herbs, by all means use them! Dry prepackaged herbs will work excellent too are are inexpensive and go a long way.

As with all chicken breast recipes on a George Foreman Grill, you’ll get best results using a cut of meat that isn’t too thick. Use a meat mallet and pound larger chicken breasts thin – to approximately 1/2″ thick. The results will be greatly rewarded. This will also help to make the chicken more tender.

If you’re on a diet to lose weight, this is an excellent recipe to make a meal of. Add some fresh steamed vegetables for a wonderful low-fat, low calorie, low sodium meal.

  • 2 4oz boneless skinless chicken breasts pounded to 1/2″ thick

I needed a recipe to try out my new cast iron grill pan. I love it! Super simple. The sauce (sans tarragon) is my go-to salad dressing now.

This was absolutely simple and my hubby & I loved it. It was filling, even though it didn't have a ton of calories. I did double the sauce, as the greens needed some kind of dressing. I really didnt need to, though, as I have plenty left over for the other half that we didn't eat. It was pretty spicy, so if you like less spice use a little less mustard. A definite make-again on a night when I don't have much time and want something yummy!

Great dressing! Could omit some of the water to make it creamier, too. Served with sweet potatoes and my Dad couldn't get enough!

Really good and simple. Particularly tasty for dijon mustard fans.

Excellent, restaurant quality. Fast and easy as well. Will prepare again.

The sauce makes the dish. Very flavorful. I grilled the chicken (thighs) on the grill. It will be delightful light meal for summer. I would easily serve to guests.

This was simple and delicious! I did need to finish 2 of the thicker chicken breasts in the oven and be careful if you're going to use Wegmans brand Dijon mustard. VERY spicy! I chopped the chicken breast before topping the greens and served it as a salad. I will be making this again.

This was a wonderful recipe. I put some of the dressing on the chicken while grilling. It was easy to make and the taste of tarragon added so much to it. Certainly great for company.

I love this recipe. I cooked the chicken in my cast iron skillet and also, like another reviewer, served it with asparagus. I added a little EVOO to the skillet while the chicken was "resting" and then sauteed fresh asparagus spears with a little salt and pepper for about 4-5 minutes. Yummo!

Grilled it outside. Perfect summer salad, used mixed spicy greens from the farmers market!

So good & so easy. This is a weeknight staple! I made a flank steak salad the next night and used the leftover dressing - still delicious.

This was ok for me. The sauce was intense so definitely needs to be served over the bed of greens to mellow it out. I don't know if I will make this again but I did eat all the leftovers from the first try.

This was very simple to make and tasted very good! I was pleasantly surprised and will definitely make this recipe again.

This is fantastic. I put a small amount of dressing on the green before adding the chicken, then the rest over the meat. This is a great spring dish and very light. I served it with cheesy orzo and strawberries.

I thought this meal was really good. I used spinach instead of just greens. We thought the sauce was great. I didnt think this was enough so I made more.. bad idea he hated it, said it was over powering. sent him to work with left overs and his own sauce. got a text saying he liked it with a lot less sauce. guess i will stick to the recipe next time. will make this again.

Love this recipe! Husband loved it! Did not have fresh tarragon, so used dried. Served with steamed asparagus. Spoonful of sauce on chicken and a spoonful on the veggies! Delicious! This is a keeper!

Did not have shallots so substituted finely minced green onion and a touch of garlic. Served with asparagus, broiled tomatoes, and sourdough bread. Good enough for company and SO simple.

I love tarragon and mustard and found this dish fell short. The sauce was more like a salad dressing. I will try it again and use the sauce as a marinade. The flavor of the shallots was good, but there were so many little pieces in the sauce.

What a great recipe! Very easy to make (our chicken seemed to take forever to cook on the grill pan). Followed recipe exactly. Served with roasted potato wedges. Husband said it was a keeper. We'll be making this often.
