Remove the spine and wash quickly under cold endive water.

Beat eggs well with cream cheese, add pepper.

In a Teflon pan, place the fried smoked ham and the finely chopped garlic.

Add endive, salt, pepper, thyme and sauté together for 8-10 minutes.

Remove the composition on a plate.

In the same pan, melt the butter, pour over the beaten eggs.

Place the ham endives on top, take a peppercorn and let it set for a few minutes.

Fold the omelet in 2 and leave for another 2-3 minutes.

Cut the omelette in 2 and serve with a lettuce.
