Preheat the oven.

Gradually incorporate the meringue and mix well.


Place the first part of the dough in a tray, on a baking sheet, spread the cream cheese, sprinkle from place to place the orange and lemon peel (kept in sugar, in a jar) and raisins. Cover with the other half of the dough, remove the excess dough and grease the pie with the beaten egg. Prick with a fork from place to place. From the dough I also made some daisies for decoration.


Put it in the hot oven, about 5-10 minutes on high heat, so that the dough increases its volume, then 15-20 minutes on medium heat, to penetrate well. Bake until golden brown.

Ingredient:

3 eggs
400 g flour
approx. 100 ml of hot water
salt, a knife tip

filling:
300 g telemea cheese
50 g sour cream
100 g sugar cough
3 egg whites
raisins
lemon peel

100g margarine for greased

Method of preparation:
Mix the flour with the yolks, add the beaten egg whites with a pinch of salt.
Knead an elastic dough that is left to rest for 15 minutes, and during this time mix the ingredients for the filling, at the same time put in a pan 2 liters of boiling water.
The dough is divided into 4 pieces, then each piece is spread in a very thin sheet.
Prepare the baking tray, greasing it only with melted margarine.
When the water starts to boil, the first sheet of dough is placed max 10 sec in hot water, removed with a whisk and immediately immersed in a bowl of cold water.
Remove the sheet, drain and place in the tray, wrinkling it a little, and spread a layer of filling over the sheet.
Do the same with the other dough sheets, spreading a layer of filling between them.
Spread the last sheet of dough with melted margarine and sprinkle with a little caster sugar, then bake the pie until browned on top.
Cool, portion and powder with powdered sugar.

For the filling, we mixed the following homogeneously: 500 grams of salted cheese,
500 grams of sweet warp,
1 bunch of finely chopped dill,
5 eggs.


Method of preparation

From yolks, mineral water, salt powder, yogurt and 400 grams of flour, knead a smooth and elastic dough (if necessary, add 1-2 tablespoons of flour). The dough is placed on the work surface greased with oil and divided into 2 equal parts. Knead the margarine or butter with the flour (30 grams) until it is incorporated & # 8211 flour has no other role than to make the fat adhere better to the dough. Take a piece of dough and spread it on the work surface greased with oil in a square sheet. Half of the amount of butter or margarine is evenly distributed over the entire surface of the sheet, then cut two cuts on each side of the square, without completely detaching them. After this time, roll out the dough (same as the second fold, greasing with oil) in a sheet of the required size (I made the pie in a 40/28 cm tray). I rolled the sheet on the rolling pin and rolled the rolling pin over the tray, thus placing the dough in its place. I perforated from place to place with a fork (so as not to swell excessively when baking) and I placed the filling on top. I placed the second sheet on top and cut the raw pie into pieces of the desired size, then I finished with egg yolk. Preparation time: 100 minutes

Ingredient:

  • 500 grams of flour
  • 250 grams of fatty butter (minimum 80%)
  • 2 yolks
  • 6 tablespoons sugar
  • 2 tablespoons lemon juice
  • 1 sachet baking powder (10 grams)
  • 1 sachet of vanilla sugar
  • 200 ml cream
  • 600 grams of cottage cheese
  • 3 eggs
  • 2 sachets of vanilla sugar
  • the peel of a lemon
  • 50 grams of raisins
  • 4 tablespoons semolina
  • 300 milliliters of milk
  • 1 pinch of salt
  • sugar to taste
  1. Make the cheese filling: boil the milk with the vanilla sugar, lemon peel and a little salt.
  2. When the milk starts to boil, add the semolina in the rain, stirring constantly until it boils and binds well. Remove from the heat and allow to cool.
  3. Pass the cheese, well drained, through a fine sieve and mix it with 3-5 tablespoons of sugar (to taste).
  4. Using a blender or a wooden spoon, whisk the semolina with the cheese.
  5. Stir in the eggs one at a time.
  6. Make the dough: Separate the yolks from the egg whites. Mix in a deep bowl, by hand or with a mixer, the flour, butter, sugar, vanilla sugar, uncooked baking powder, lemon juice, cream and egg yolks and a little salt.
  7. Homogenize until you get a relatively soft and sticky dough.
  8. Preheat the oven to 180 degrees (medium heat).
  9. Grease a cake pan with butter and powder it with flour, or use parchment paper.
  10. Divide the dough into two equal parts.
  11. Spread the first sheet on a powdered top with a little flour, roll it on the rolling pin (roll) and roll it in the tray. Spread the sheet evenly on the bottom of the tray using your fingers.
  12. Pour all the cheese filling over the first sheet and level with a spatula or spoon.
  13. Prepare the second sheet of dough and add it over the cheese. Lay it out so that it covers the entire tray (including the corners).
  14. Put the tray in the preheated oven. Bake the pie for about 35 minutes in the oven. The pie should be nice and evenly browned on the surface.
  15. After cooling, remove the edges and cut the cake into squares suitable for serving.
  16. Garnish with powdered sugar.

The cheese pie is served hot or cold, optionally with a tablespoon of whipped cream or vanilla ice cream.


SALTED CHEESE PIE

With just a few ingredients and a little patience, you can prepare the best salted cheese pie at home.

ingredients:

  • a packet of fine pie sheets
  • 350 gr. cow telemea
  • 4 eggs
  • 500 gr. sour cream
  • 150 gr. butter

The first step in today's preparation involves greasing a heat-resistant tray with a generous layer of butter.

It is very important to take the pie sheets out of the freezer half an hour beforehand so that they do not have time to dry. They are very delicate and thus we avoid gluing them, which will not allow us to grease them individually.

I grate the cheese on the large grater and then I mix it with 200 grams of sour cream and an egg.

I start to grease a sheet of pie with melted butter, adding 4 sheets on top of each other, spreading a quarter of the cream cheese composition all over the surface and forming a roll that will fit into my tray along the way. It must be worked quite quickly, eventually we can have at hand a wet towel to cover the unused sheets until installation.

I estimated that I would form 4 rolls from the whole package of sheets and the cheese mixture obtained.

I prick them with a fork from place to place, and add a final touch of butter on top.

In a separate bowl beat the remaining 3 eggs with 300 gr. of sour cream then turn them over the cheese rolls to cover them everywhere.

The oven is already heated to 190 ° and let the pie bake for about an hour and a half.

Towards the end, I reduce the temperature a little more to make sure that it penetrates enough and does not burn underneath.

The pie has grown very nicely. The crust on top is amazing and has a layer of cheese enough for my taste.
